There is nothing quite so wonderful as a perfectly seared piece of fish: Crispy crust on one side,  just-barely-done meat in the center. It is one of the great tastes of the world, and it is my go-to method for cooking most any fish.

I was primarily a seafood cook for 15 years before I ever touched a piece of wild game. Fishing is in my DNA, and I am proud to say my parents taught me well how to catch all sorts of sea creatures. I did not learn this technique from them, however. I learned how to sear a fish when I was a line cook years ago. Pan-searing is a classic restaurant method of cooking fish.

The technique works on any fillet or fish steak. I am using striped bass here, but most fish will do. The only fish that don’t respond well to searing are those with lots of bones, like shad or very small fish, like sardines. Even so, I’ve seared deboned sardines and it worked OK.

It is not hard to master this skill, but there are some tips and tricks you need to know.

A few things first. Most fish have very tasty skin if it is cooked properly. Some, like triggerfish or sturgeon or swordfish, have skin so thick or rubbery that it’s essentially leather. Others, like mackerel, have skin so thin you can’t get a decent crisp on it. But ye olde fish, such as bass, perch, salmon, flounder, snapper or rock cod, have excellent skin that crisps nicely. Be sure to scale the fish (or have your fishmonger do it), but leave the skin on the fillet.

Doctors may have oversold the benefits of mammograms and underplayed its risks, which has left many women unable to make an informed decision about whether or not to have regular breast cancer screenings beginning at age 40. That troubling finding is based on the latest review of research conducted by Harvard Medical School and Brigham and Women’s Hospital researchers, which concluded that mammograms decrease a woman’s risk of dying from breast cancer by a modest 19 percent.

Women in their 40s had just a 15 percent reduction in their breast cancer death risk compared to a 32 percent reduction for older women in their 60s who are far more likely to get breast cancer than younger women, according to the study published Tuesday in the Journal of the American Medical Association. None of the trials could determine whether mammograms reduced a woman’s risk of dying from any cause: Certain chemotherapy drugs, for example, damage the heart muscle and raise the risk of dying from heart disease.

This week I met up with a couple of girlfriends for a welcome home dinner. We went out for healthy Mexican food at Porque No?, one of my favorite restaurants here in Portland. They have tasty fish tacos, homemade tortilla chips, and delish guacamole. They also make a mean margarita. I ordered one, but I got way more than I bargained for—a margarita served in a full-on pint glass. (As in, way bigger than the one below:)

A pint of margarita means essentially two cocktails in one, at least. Margaritas are already known for being one of the more sugary, calorie-loaded cocktails out there so I knew I was breaking some sort of rule by drinking it. (At least I stopped at one!) When I checked the calorie count for this tequila spiked treat I found that a 3.3 fl oz serving has 153 calories. Not bad, until you factor in that the one I had was around 16 fl oz! Multiply that number by 4 and you’ve got over 600 calories in a glass!

Have you tried stevia? You may not know it yet, but a quiet revolution is taking place on our supermarket shelves.

After years of research and testing, scientists think they’ve found a natural sugar substitute that has zero calories, zero carbohydrates and won’t raise blood sugar levels.

The ‘miracle’ ingredient, stevia, is between 250 and 300 times sweeter than sugar, and so by adding it to foods and drinks, manufacturers can drastically reduce the calorie content.

You may well already have had some.

Look on the label of a can of Sprite and you’ll notice stevia in the ingredients — that’s why it’s now 30 per cent lower in sugar.

You can also buy Truvia, a sweetener made from stevia manufactured by Silver Spoon, and stevia as a powder to add to drinks or cereals, not to mention stevia chocolate bars and yoghurts.

Sugar Substitutes

Sugar substitutes are, of course, nothing new  — artificial sweeteners such as aspartame, saccharin and sucralose, made from amino acids and chemicals — have been around for more than 40 years.

But while these have been approved by regulatory bodies and are widely considered safe, many consumers remain suspicious of them.

Are you suffering from facial wipe damage?

Could you be suffering from facial wipe damage? There are a few beauty products we desperately cling to. One of these essentials are facial wipes, the Holy Grail of skin cleansers when you're on the go or about to fall face first into your pillow after a long night of 99-cent margaritas. You would have to pry the wipes from our cold, dead hands, which is why this Daily Mail story stating that they could be damaging our skin caused us to — how do we say this gently? Freak the hell out.

The article goes in depth about how using wipes can exacerbate some skin concerns while creating a new host of issues, not the least of which are premature wrinkles, dryness, acne, and allergic reactions. (Granted, regular cleansers and improper cleansing techniques can also cause these same issues.) And, though we know using cleansing wipes in place of washing your face isn't the best substitute, we're here to argue that making any attempt to get grime and dirt off your face before you force it in with a pillowcase is a good one. We'll take our points for effort, thanks.

Make Your Own, DIY Green Cleaning Products

By now, many of us have come to understand the importance of reducing the chemicals we are exposed to. One of the ways we can do this is to use natural or “green” household cleaners. Like most things that are good for us, green cleaners tend to cost more than the chemical laden variety. The good news is that you can make most of the cleaners that you need yourself! With spring-cleaning right around the corner, now is the perfect time to try your hand at making your own household cleaners!

The basic ingredients for most household cleaners are simple and can be found just about anywhere. You may even have many of them in your house already. If you don’t, then plan on purchasing the following; vinegar, baking soda, hydrogen peroxide and essential oils in scents that you enjoy and associate with cleanliness.

Basic All Purpose Cleaner

In a spray bottle, combine water and vinegar in equal parts. If you would like, add 10-20 drops essential oil of your choice, I like lemon for this! If you don’t like the vinegar smell don’t worry, the smell will evaporate quickly.

This makes a great cleaner for windows and other glass surfaces. An added tip is to clean your glass with old newspaper to eliminate streaking. Vinegar also works wonders on hard water and mineral buildup! 

Baking Soda

You don’t have to do anything fancy to Baking Soda to make it an awesome cleaner. Almost anything you use your normal “powder type” cleaner for, you can substitute baking soda. As a toilet bowl cleaner, simply sprinkle it inside your toilet and leave to soak for an hour or more. Then scrub as you normally would. To clean your sink make a paste using 3 parts Baking Soda with 1 parts water. Most of us know to keep a small box of baking soda in the fridge to keep the odors down. Did you know you could sprinkle it in your trashcan, diaper pail or other “potent” smell areas too?

Hydrogen Peroxide

As a teenager, I lived with my dad in a small town whose unofficial name was, “The Middle Of Nowhere”. At that time, the Internet was basically non-existent so thrills were hard to come by. Hydrogen peroxide was an accessible and basically harmless way to mix things up. Experimenting with “highlights” led to large patches of bleached hair. This stuff is POWERFUL but much gentler to the environment than bleach. Guess what? It’s not just for hair!

Wipe and clean your fridge and microwave with Hydrogen peroxide. Mix it 50/50 with water and use as a mouthwash, it kills bacteria!

You can clean your cutting board and countertop with hydrogen peroxide. Wipe it on and let it bubble for several minutes. Rinse it clean and you’re ready to go!
